Depending on if it's wild pheasant or raised pheasant, they are quite different in taste. It's a very hard meat to cook, because if you don't get it spot on then it becomes very dry (which I've seen happen a fair bit) I'm surprised nobody has mentioned smoked pheasant, my favourite.

It's like fishing for mackerel with light tackle mate. They feisty little ****ers, don't grow very big but fight like ****, I respect them for that. Like dogfish, Britains smallest shark. Excellent battlers, fight to the end. I always let them go because they have traits like I do. I respect them.
Not long in Germany back in the '70s went for a meal with a German group and we had Pferdesteak which we enjoyed. Didn't find out for weeks that it was horse steak. German lessons came in handy after that.
